What it measures

Difference between actual and standard food cost

Business impact

  • The 'chaos tax' of operational firefighting: unplanned batch changes, ingredient substitutions, and rework cycles inflate direct labor and utility costs, destroying planned cost absorption.
  • Adverse variance is a direct drag on working capital. Over-production to absorb overheads bloats the inventory position, tying up cash and increasing the risk of a future stock write-off.

Formula

(Actual COGS - Theoretical COGS) / Theoretical COGS x 100
Actual COGS
Total cost of goods sold per the management accounts for a specific production volume. Includes actual raw material and packaging costs consumed, direct labor, and allocated production overheads.
Standard COGS
The theoretical cost to produce the same volume, based on the approved Bill of Materials (BOM), standard labor routings, and budgeted overhead rates. This is the 'should have cost'.
